"An amino acid primarily found in Camellia sinensis. In the chemistry of tea, it is responsible for the unique 'umami' savory profile and is known for its structural role in the plant's nitrogen metabolism."

"Water is the solvent. High mineral content (TDS) can 'clog' the water's ability to bind with tea molecules, leading to a flat, metallic infusion. Optimal TDS is 50-150ppm."
